Is it possible to specify a conditional filter along the lines of FIELD=Artist, ARTIST contains "&", ie list only tracks that whose artist entry contains an ampersand anywhere in that field?

Just open the Filter via View > Filter or [F3], select ARTIST and enter the ampersand character as filtering criteria.
