And then it asks me to reboot my computer

I don't need to restart my computer for a piece of software that writes tags to mp3 files.

I don't need to restart my computer for a piece of software that reads PDF files. (That's aimed at Adobe)

I don't need to restart my computer for anything other than major software installations that need to use the system kernel, so occasional updates and things related to my virus-detection software. Otherwise - never.

Please do not ask me to reboot my system after an upgrade. I have yet to see what actually has improved anyway. (Options to automatically find art would be a nice feature).

The reboot is necessary for installations that enabled the Explorer context-menu extension and the extension gets updated with the new version of Mp3tag and the extension was already loaded by the Windows shell process.

This is of course not necessary with each update. Mainly updates that include support for new file types also update the shell extension.

You can of course continue working and reboot later — you just won't see the updated version of the extension until then.

If this all is not an option for you, I'd suggest using the portable installation (which doesn't provide the Explorer context-menu extension).
